INGREDIENTS:
1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1 tsp cinnamon
1/3 cup vegetable oil
1 egg
1/3 cup milk
2 apples (peeled, cored and chopped)
For Topping:
1/2 cup sugar
1/2 cup butter, cubed
1/3 cup all-purpose flour
1 1/2 tsp cinnamon
INSTRUCTIONS:
Preheat oven to 400˚F.
For the muffins, mix flour, sugar, salt, baking powder and cinnamon. Mix in oil, egg and milk, then fold in the apples.
Spoon batter into greased muffin cups.
Mix together the remaining ingredients in a small bowl, then sprinkle on top of unbaked muffins. Bake for 20-25 minutes, until a toothpick comes out clean.
