Low in calories, high in all the good stuff like Vitamin C, ZUCCHINI is pretty healthy AND so easy to prepare. Try this scrumptious little dish that won’t take long at all.

What you need – ZUCCHINI, as many as you like, olive oil to drizzle, breadcrumbs and grated Parmesan cheese in equal amounts, and salt and pepper

What to do – Heat oven to 450F. Cut ZUCCHINI lengthwise in half, and half again. Place the strips on a baking tray, Drizzle with olive oil, season with with salt and pepper then sprinkle the breadcrumbs and Parmesan cheese mixture. Bake for 10-12 minutes until golden and the ZUCCHINI is soft. Serve before you eat it all yourself.

We have STRAWS galore in store! 🍓

Time to break out your favourite STRAWBERRY recipes. If you don’t have any 😳 then try this STRAWBERRY OATMEAL BAR – delicious even healthy!

Prep - Heat oven to 375F. Line a pan with parchment paper

Prepare the base – Combine 1 1/2 cups old fashioned rolled oats, 1 1/2 cups whole wheat flour, 5 tablespoons coconut oil (melted), ½ cup brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Set aside 1 cup of the mixture for the topping.

For the strawberry filling – Mix together 4 cups of sliced strawberries. 1 tablespoon of lemon juice and 1 teaspoon of corn starch.

Evenly press the crust mixture into the lined pan. Spread the strawberry mixture over the base, sprinkle the remaining oat mixture over the strawberries. Bake for 50 minutes. Cut into slices, leave to cool and serve.

ASPARAGUS season has begun! While they can be found year-round, between now and May is the best time to eat them.

When choosing ASPARAGUS, look for firm bright green stems with tight purplish tips. For the best way to store asparagus, wash in cold water, snip the ends and place in a small glass or mason jar with enough cold water to cover the ends. Asparagus stored this way won't dry out. You can place them in the fridge, they will also last a few days on the kitchen counter at room temperature.

Never overcook asparagus! These little gems don't take long to cook at all. The quickest and easiest way is to saute in a pan over a medium high heat with minimal oil - be careful not to overcrowd them. When tender, add salt & pepper, and finish with a splash of balsamic vinegar or fresh squeezed lemon.

No matter how you choose to prepare your asparagus, they'll be delicious!
